For starters, TeamViewer isn't really technically needed if you are already managing the devices with SOTI MobiControl since you have licensing for a pretty feature rich Remote Control capability that is already native to MobiControl. I typically only see TeamViewer used for other less capable EMMs like Intune that don't offer native Remote Control like SOTI. 

If you do still have a legitimate need to use TeamViewer instead of native Remote Control then I would look at what Managed Configurations are available to configure the application. This would be found in the TeamViewer documentation although you can likely at least inspect what configurations are available through Managed Play in an App Policy. Note that you can't install TeamViewer as a Package and use Managed Configurations, it has to instead be installed through App Policy.
